About CAN-USA
CAN-USA Catering was conceived by Mark and Tracy (Hardstaff) Sims, while they were on their honeymoon at Koocanusa, B.C. The concept of bridging the two countries of Canada and the U.S. together fit the vision that they both shared in this entrepreneurial endeavour.
Mark Sims comes to us from Grand Rapids, Michigan and brings 16 years of culinary arts experience, with the knowledge of a wide range of American cuisine. Mark’s experience ranges from fine dining to the littlest “juke joint” found on your local street corner. The specialties that he has fine tuned over the years include his charcoal smoked BBQ Ribs, and his slow cooking techniques used for Prime Rib. Mark always puts on a cooking exhibition when it comes to his Soups, Chilis and Pasta dishes.
Learning and experimenting with new and innovative ethnic recipes is his passion. One other favourite of Mark’s worth mentioning is his breakfast repertoire consisting of breakfast pizzas, quesadillas and burritos, his gourmet pancake “candycakes”, and in particular, “Oko-toast” which is a featured specialty on their menu.
Mark’s wife, Tracy, and their beloved friend and founding member, Denise Hill, are the beauties and brains behind CANUSA! Two local Calgary girls who have settled with their families in the townships of Okotoks and High River, have been the backbone to establishing service and ethics. Although relatively new to this specific type of food service industry, Tracy and her three daughters have created a family atmosphere of serving. Tracy has served a loyal clientele over the past 16 years as a Registered Massage Therapist – Seven Rivers Massage Therapy, or you may have crossed paths with Tracy or her girls at work in local Okotoks food establishments.
Denise’s passion to see musicians succeed in their careers resulted in the creation of her company, Divine Design Creative Services, which began 7 years ago. And for CAN-USA Concerts, she will make all necessary arrangements from finding a venue and musicians/bands to complete event coordination.
